About Us

Over 50 years ago, we began more than a sausage company—we created a legacy that led to Sheboygan, Wisconsin, being known as the "Bratwurst Capital of the World." Sheboygan has always had a proud German heritage—people with a strong work ethic and a history of excellent sausage. Old Wisconsin is built on this foundation, and it can still be tasted today in our quality and slow, hand crafted approach to sausage making. Sheboygan was a natural place to start. The unique climate on the shores of Lake Michigan is perfect for sausage making. With that knowledge, Old Wisconsin began as Thielmann’s, a small sausage shop owned and operated by Frank Thielmann and William Stolzman. Even today, we still use many of their high-quality sausage recipes. Due to increased demand, we opened our first plant in 1953 and changed our name to Thielmann’s Old Wisconsin Sausage Company shortly after.

Frequently Asked Questions

How clean is the ingredient list on this product?

It is made with premium pork and beef cuts, natural hardwood smoke, and a three pepper spice blend, with no fillers, no extenders, and no binders.

Does this fit a minimalist pantry without clutter?

Yes. The resealable bulk bag reduces packaging waste, and stocking one large pouch instead of many individually wrapped snacks keeps your pantry visually calm.

Is the packaging simple and unobtrusive?

The resealable pouch is functional and streamlined, designed to seal in freshness without excess wrapping or flashy design elements.

Can I store this in a small kitchen without it taking over?

Yes. The 28 oz bulk bag stores flat, and the 4 oz single packs are slim enough for a single drawer or small basket in a streamlined kitchen.

Does this align with a less is more snacking philosophy?

Yes. The short ingredient list, real protein, and zero sugar profile support a restrained approach to snacking where one satisfying stick replaces multiple processed snacks.

Is this a good choice for intentional eating habits?

Yes. The clean label, high protein, and bold flavor encourage you to eat one stick slowly and savor it, which supports more mindful snacking.

Will this work for someone who avoids overly processed foods?

Yes. It is naturally smoked and free of the fillers and extenders common in mass produced meat snacks, which appeals to shoppers who prioritize whole food ingredients.

How does this compare to a shelf full of single serve jerky packs?

One resealable bulk bag replaces dozens of plastic wrappers, which is a better fit for shoppers who want to cut down on packaging without giving up convenience.

Is this better than flavored pork rinds for clean snacking?

It is more protein dense, naturally smoked, and has a richer flavor profile, while still keeping the ingredient list short and recognizable.

Can I keep just one snack in my pantry instead of five?

Yes. The bold, layered pepper flavor and versatile use cases mean this one product can replace jerky, protein bars, and other snacks for a streamlined pantry.

Is the bulk bag worth it if I am only a casual snacker?

The resealable design keeps opened sticks fresh in the fridge, so even casual snackers can buy in bulk without worrying about waste.

How should I store these sausage sticks after opening?

Before opening, the sticks are fully shelf stable and can be kept in your pantry. Once opened, reseal the pouch and store it in the refrigerator to maintain peak freshness for the remaining sticks.

Are these sausage sticks ready to eat right out of the package?

Yes. They are fully cooked and naturally smoked, so you can eat them straight from the package with no prep, cooking, or reheating required.

How many sticks are in one serving?

Each serving is calculated to deliver 90 calories, 5g of protein, and 0g of sugar. Refer to the nutrition panel on the package for the exact stick count per serving.

Do these work for someone with a gluten sensitivity?

Yes. The product is formulated to be gluten free, making it a safe snack option for people with celiac disease or anyone avoiding gluten.

Are these safe for kids to eat?

Yes, the product itself is shelf stable and made with quality ingredients. However, the Serrano, Jalapeño, and Red Pepper blend delivers a real kick of heat, so younger children or spice sensitive eaters may find it too hot. Use your discretion based on your child's palate.

What comes in the package when I order it?

You will receive a single sealed pouch or multipack of Old Wisconsin Hot and Spicy Sausage Snack Sticks in the size you selected: 28 oz resealable bulk, 4 oz single, or 4 oz pack of 4. Nothing extra is required to enjoy them.

Is this product safe to eat past the printed date?

For best quality, consume by the date printed on the package. Because the sticks are shelf stable, they are often still safe shortly after, but always inspect for off smells, texture, or appearance before eating.

Does this product contain any common allergens?

It is gluten free with no fillers or extenders. Always check the printed ingredient list for the most accurate allergen information specific to your sensitivity.

What is the difference between sausage sticks and beef jerky?

Sausage sticks are made from ground seasoned meat that is stuffed into a casing and smoked, giving a softer, more flavorful bite. Beef jerky is made from whole muscle cuts that are dried, resulting in a chewier, leaner texture. Sausage sticks typically deliver bolder seasoning and a richer mouthfeel.
